If you are like me, then you automatically assume that soups with cream in them are unhealthy. It doesn't need to be this way. This dish's broccoli and spinach more than compensate for the creaminess of the half-n-half, cheddar cheese and other ingredients. You'll be happy to serve this broccoli cheddar soup once you realize the spinach and broccoli are only the tip of the iceberg when it comes to vegetables. (Although there isn't any iceberg lettuce).

Is Creamy Broccoli Cheddar Soup Healthy?

- 1 onion, diced
- 2 cloves garlic, crushed
- 2 sticks of celery, sliced
- 2 carrots, peeled and chopped
- 1 head broccoli, cut into florets
- 2 cups baby spinach
- 2 tablespoons of flour
- 2 cups half-n-half
- 2 cups chicken stock
- 1 tsp of ground coriander
- Ground paprika, 2 tsp
- Salt and pepper
- 2 cups cheddar cheese
Instrucciones
Saute
Add the celery, carrots and onion to a large pot on MEDIUM-HIGH heat. Saute the onions for 3 to 5 minutes, until they are fragrant and slightly browned.

Remove the pot from the heat, and add the flour. Pour in the milk, stir again and pour it back into the pot. Add the chicken stock along with the broccoli, spinach and coriander.
Simmer
Replace the pot on the stovetop. Cover and simmer for 15 to 20 minutes. Stir the mixture occasionally to avoid lumps forming at the bottom of your dish.
Purée
Add the cheddar cheese, and continue to simmer for one more minute. Salt and pepper can be added to taste. Puree the soup with a stick blender before serving.

Are organic meats better?
If you've been paying attention for any time, you probably already know the answer to this question. However, the truth is organic food is gaining popularity at a time when conventional food is falling out of favor.
Organic foods continue to be popular because they offer a healthier alternative. Organic products are not only safer for our health but also reduce pollution and waste.
But there are two sides to this coin. Organic produce takes more time to grow and requires greater resources. Organic food is more expensive than non-organic.
Organic meats are generally more expensive than conventionally raised animals. However, there are ways to reduce these costs without sacrificing quality.
Buy local to save money. Buy locally grown vegetables and fruits to help keep prices low. Farmers receive incentives to grow healthier crops.
Look for bargains to cut down on costs. When you purchase organics, there are often discounts.
You can also save money by eating less meat. Meat production can be costly due to the feed needed to raise livestock.

What are some things I should look out for when purchasing organic goods?
Look for USDA-certified organic labels. This certifies that the product has met certain standards set by USDA. On packages, boxes, cartons or cans, look out for the USDA Organic seal.
When you shop for meat, ensure that it comes from cows who are fed organic feed. Cattle are ruminants. This means they chew the cud. Ruminant cattle have 4 stomach compartments: Rumen, reticulum and omasum. To be labeled '100% organic, all animal parts must be organically nourished.
You should only purchase chicken that has been raised organically. It must not have ever been treated with antibiotics. Chickens are omnivores. This means they can eat both plant and animal food. Omnivorous chickens have a digestive system that includes a crop (proventriculus), gizzard and small intestine.
It is important to ensure that dairy products are from cows that were fed 100% organic feed. Dairy cows have four stomach compartments, just like ruminants. The fourth stomach compartment is the udder.
Check the label when purchasing livestock of any other type to find out what percentage was used in the animal's diet. One example is pork that may be labeled '95% Organic'. This means that 95 percent came from organic sources.
Is organic the same as pesticide-free?
Organic food is chemical-free and grown without pesticides. This means that organic food is not exposed to pesticides or fertilizers.
